Tasting Notes
Savory aromas and flavors of candied bacon, charcuterie meats and leather integrate with beautiful layers of fresh figs, black cherries and stewed strawberries. Robust flavors of dried herbs, pipe tobacco and cabinet spice lead into notes of grilled plums and vanilla. The finish is infused with black pepper, cayenne, dill and cocoa powder. Big full-palate tannins infused with cinnamon, white pepper and hints of eucalyptus on the finish.
Method
A blend of Tempranillo from Numeral Mountain and Dick Mesa Vineyards in Entiat, with a splash of Tempranillo from Sugarloaf Vineyard. Hand-picked, hand-sorted fruit fermented in small bins. We aged this beauty in 40% new French oak barrels for 22 months and bottle-aged for 6 months in our cellar prior to release.
