Black cherry, pipe tobacco, eucalyptus, cocoa, and cedar with earthy hints of graphite and pencil lead. Silky texture and dusty tannins with layered flavors of black fruit, menthol, and cola with a long peppery finish.

Method

Harvested near the end of October, this Cabernet Sauvignon comes from Block 5 of Destiny Ridge Vineyards, the warmest Cabernet block from this site. The record-setting temperatures during the 2014 growing season resulted in rich and dark fruit flavors with dusty tannin structure. Destemmed and whole-berry fermented in small bins for just over two weeks before pressing to barrels for malolactic fermentation. Aged in 100 percent new French oak barrels for 18 months and blended with a small amount of Merlot, our first-ever Cabernet Sauvignon was bottled without fining or filtration, preserving every bit of wisdom that lies within.
