Tasting Notes

Rich dramatic notes of fresh blueberries, blackberries and boysenberries intermix with savory pipe tobacco, incense, sage and smoked paprika. The flavors continue to intensify with dark chocolate, baking spices, macerated berries and hints of roasted nuts and mesquite BBQ. The tannins are robust and lead into an expressive finish of leather, cedar, red curry, cayenne, white pepper and subtle hints of eucalyptus.

Method

A blend of 94% Maddy's Block Vineyard and 6% Elephant Mountain Vineyard Cabernet Sauvignon. Hand-picked, hand-sorted fruit fermented in small bins and barrel-aged in a blend of 40% new French oak from Tonnellerie Quintessence and Seguin Moreau. We bottle-aged this beauty for 6 months in our cellar prior to release.
